A Texas native, Lauren moved to California 15 years ago to attend California Culinary Academy. A practicing vegan for 11 years and vegetarian for 26, she pursued careers in several notable vegan restaurants including Millenium, where she learned everything there was to know about seasonality, experimentation with ingredients and how to make plants flavorful and delicious from Chef Eric Tucker. After leaving Millenium, she joined Back of the House as a part of the opening bar team at Flores, where she got to bring her mother’s love of a good margarita to Union Street. Lauren is very excited about sharing everything that she loves about the Bay Area, including the abundance of fresh, flavorful, unique and delicious ingredients with our guests. “With the use of fresh herbs, housemade preserves, bitters and tinctures, I am able to share the bounty of the Bay with our guests, and respect our high quality ingredients by being as low-waste as possible. I am thrilled to be a part of a restaurant where I am excited to eat and drink every single thing on the menu, and to show people that vegan food is exciting, fresh and delicious.”
