Blair brings an omnivore’s palate to Wildseed, ensuring that each dish is flavorful and satisfying for guests, regardless of their dietary needs. His resume consists of Michelin starred restaurants such as The Restaurant at Meadowood, but he now likes to cook the way he eats, which doesn't include white tablecloths and fine china. “I am happy that we are able to make really beautiful food here at Wildseed. One of the things I love most about what we’ve been doing is that everything is so vibrant and colorful. All of the food feels fresh and looks as beautiful as it tastes. This project has been a huge discovery process for me, and I have begun to incorporate a lot of these ingredients into the food I cook at home. The Beyond Spicy Italian Sausage has replaced pork sausage for me and my family, and it feels good to be making better choices at home without sacrificing flavor or satisfaction.”
